Do hairstyle ruts happen to everyone or is it just me? I tend to get stuck doing the same 3 or 4 hairstyles every. single. day. Then I see cute tutorials on pinterest and think "oh I should totally do that!" but when 6:30 am rolls around my mind's too busy wishing it were back in bed to think of how to style my hair. So to remedy that, here's a list of some cute, easy tutorials to shake things up a bit.






Mini Enchilada Bites

Mexican food has never been my forte. But when my brother came home from college in Arizona over Christmas and asked me to make some type of Mexican dish for Christmas Eve, I had to try something. These mini enchiladas were a big hit, but incredibly tedious to make. Still, they're a great appetizer for a party and can be made as mild or spicy as you want.




 I used this recipe for mini enchilada cups, but used flour tortillas and adjusted the amount of beans, chicken, and cheese that topped the cups. We served them with salsa and guacamole as toppings and they disappeared in a matter of minutes!

Oh 2013, I don't know what to do with you. I had great plans, you know. This was going to be the year. I was going to really evaluate who I am and start making the little changes in my life to make me happier. I've been feeling stagnant and this was going to be the year all that was going to change. I was going to get back into my hobbies and interests and start spending my time doing things I love instead of just staring at the TV. Then you laughed and threw the flu at both me and Kacey. So instead of finding my inner goals and resolutions for the new year, now I only care about finding where I put the Theraflu. And then the Packers lost last night. Well played 2013, but just you wait until I'm better. Then I'll be back with a vengeance and ready to dance and sew and start a new adventure and you won't even know what to do with me. Until then.....I'll be in bed with a box of kleenex.

Truffled Mac and Cheese with Cauliflower

I was introduced to truffle oil a few years ago but since it's a bit pricey, I hadn't thought of actually buying some myself. Then I found a little olive oil shop nearby that had it at a reasonable price, so I snatched it up. I'm in love with the recipe. It's definitely one of those so not healthy, but oh so good comfort foods. But to make it a tiny bit healthier, I've added some chopped cauliflower which you can't even detect since the flavor and texture meld so well into the cheesy pasta. 

1/2 head of cauliflower, chopped
12 oz cavatappi pasta
1/2 onion, chopped
1 clove garlic, minced
4 tablespoons butter
2 cups milk
1/4 cup flour
1 cup swiss cheese, shredded plus more for topping
1 cup cheddar cheese, shredded
1/3 cup panko bread crumbs
2 tablespoons truffle oil


Cook pasta and cauliflower together until pasta is al dente, drain, and set aside in a pot or large mixing bowl. While pasta is cooking, saute onion and garlic in butter until brown.


Add milk and flour to the pan and whisk until there are no flour chunks and bring to a boil. Remove from heat, add the truffle oil and the cups of cheddar and swiss cheese and mix well until the cheese is melted.  


Pour the mixture over pasta and cauliflower and mix, then pour into a 13 by 9 inch baking dish.


 Top with the panko crumbs and a sprinkling of cheese. Broil for 3-4 minutes until the top is brown and crispy.  Remove from oven, wait until it's a bit cooler, then stuff your face. You can thank me later.
